Sweet Potatoe and chickpea Patties

Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 can chickpeas, drained and rinsed
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Method

  • Steam sweet potatoes until tender, about 15 minutes.
  • Mash sweet potatoes and chickpeas in a bowl.
  • Stir in onion, garlic, cumin, paprika, salt, and pepper.
  • Form the mixture into small patties.
  • Heat olive oil in a pan over medium heat.
  • Cook patties for 3-4 minutes on each side, until golden brown.
  • Serve warm with a side of vegetables.
